Although you can find kale in supermarkets year-round, this member of the cabbage family is at its peak flavor in cool-weather months.  Kale also brings a good dose of protein and iron to this side dish, and hte jalapeno pepper adds a pleasant kick.  You can substitute collard greens for kale, if you prefer.

If you stick to the Paleo diet, then chances are you can quickly get tired of the same old boring veggies.  It’s important to try new things and find receipes to help spice things up.  Two of my new favorites are spaghetti squash and butternutt squash.  Does anyone have any other suggestions?  What veggies do you like and how do you prepare them?  Post thoughts to comments.
